Kitsune
8-Course Nouveau Japanese Feast
No, Kitsune is not the newest Japanese edible, but, rather, it is the mythological shapeshifting spirit fox of Hokkaido, Japan’s second-biggest island, which can turn itself into a beautiful woman or elderly man at will. Magic of a different sort takes place at Kitsune, opened in 2017, where Japanese flavors meet Midwestern bounty with surprising results. Chef Ian Jones, who previously worked extensively at Chicago’s famed Sepia under his mentor, Chef Andrew Zimmerman, is focused on sustainable cuisine (see his full bio below). He sources farmers, butchers, and noodle makers who are committed to freshness and authenticity and embraces the principle of “peak seasonality,” meaning that tomatoes, for instance, are served when tomatoes are best. Whatever he's doing is clearly working, as Kitsune has been featured on the annual Best New Restaurant Lists of GQ, Thrillist, and Esquire! We'll be taking over the restaurant for this event and Chef Jones will be chiming in throughout the evening from the open kitchen to answer your questions and share his knowledge of and enthusiasm for Japanese cuisine.
